OTHELLO, Wash. –
INGREDIENTS:
– 6 cups of flour
– 2 cups of shortening (butter flavor optional)
– 1 cup of sugar
– 1 can of warmed Coca-Cola
– filling of choice
INSTRUCTIONS:
1. Add dry ingredients into a bowl and mix
2. Add 2 cups of shortening and mix
3. Add your warm Coca-Cola into the mixture little by little until a dough is formed
4. Let dough rest for 30 min. (add flour if it is still a little sticky)
5. Form meatball sized balls out of dough
6. Roll dough flat but not paper thin
7. Fill with filling
8. Fold the dough over the filling and pinch the ends together so that it doesn’t leak
9. Bake in the oven at 350 degrees for 10-12 min. or until desired crispyness
10. Let cool for about 10 minutes
11. While empanadas are still warm roll them in a 50/50 sugar and cinnamon mixture.
