Cooking with Cristian: Baby J’s BBQ and Burgers

Richland, Wash. – For the last 12 years, Baby J’s has been serving the Tri-Cities area with everything from barbecue to Mexican food.

One of the co-owners of the restaurant, Nancy Mack, tells NonStop Local that the business is actually just starting to recover after losing 80% of its customers during the pandemic.

“Thank the lord for the 20% of customers that were faithful because of them we were able to maneuver through all of that and now we’re here and we’re ready to thrive again,” says Mack.

The other co-owner of the restaurant, Anthony Mendez, says that all the wood they use to smoke their meats are all locally sourced from cherry or apple orchards.

Mack and Mendez tell NonStop Local that Baby J’s was named in honor of a baby in their family named Josiah. On July 27th, 2012, Josiah or “Baby J” was born but after a few minutes of being alive, he died twice and was brought back successfully. After being in the NICU at Sacred Heart Children’s Hospital in Spokane for 6 weeks, he was released to the family.

They say they named the restaurant “Baby J’s” as a reminder that no matter how things may look, there’s always hope for things to live again.

Pulled Pork Sandwich Instructions:

1. Get your smoker started with pellets or woods

2. Gather your meat

3. Smoke for 3-4 hours and rotate

4. Take meat out of smoker, wrap in foil and warm in the over at 350 degrees for 1.5 hours

5. Take meat out and shred

6. Toast pub buns

7. Place cooked meat on top

8. Add barbecue sauce

9. Choose sides and enjoy
